What better way to use up your leftover brisket than in some hearty chili? We’re adding some tasty extra’s to this meal – including beans (this ain’t no TX chili).
Brisket Chili
Ingredients
- 2-3 slices bacon cubed
- 2 peppers chopped
- 2 jalapeños chopped
- 1 onion chopped
- minced garlic
- chili powder
- brisket cubed
- Montana Outlaw BBQ Beef Rub
- 1 can chili beans
- 1 can diced tomatoes in sauce
- 1 can tomato sauce
- 1 can dark beer
- 1 shot espresso
- 2 cobs corn
Instructions
- Cut bacon into 1” cubes and cook in pan.
- Add onions to pan and saute until soft. Add peppers and jalapeños and let them cook down.
- Add minced garlic and cook until fragrant.
- Cut brisket in cubes. Dust with MOB Beef Rub.
- Add chili powder to pan for about a minute.
- Add brisket, stir to coat.
- Add chili beans, diced tomatoes, tomato sauce, beer, espresso, and corn.
- Simmer 30 minutes-2 hours.
