Smoked Pot Roast
A delisious take on the classic pot roast - complete with BBQ rubs and beer!

Ingredients
- 3 lb tip round roast (or roast of your choice)
- Montana Outlaw BBQ Beef Rub
- Kosmos Q SPG
- 5 carrots
- 5 celery stalks
- 2 lbs yellow potatoes
- 1 yellow onion
- 1/2 bunch parsley
- 2 sprigs thyme
- 3 cloves garlic
- 1 small container mushrooms
- 1 dark beer
- 2 cups beef broth
- 3 tbsp olive oil
Instructions
- Season roast with Montana Outlaw BBQ Beef Rub and Kosmos Q SPG, set aside to rest at least 2 hours or up to 8
- Chop all vegetables and set aside
- In a oven-proof pot, heat olive oil over medium high heat and brown all sides of roast
- Remove from heat. Light your smoker and warm to 250°
- Deglaze the pan with the beef broth and add beer and vegetables
- Place in smoker without lid for 1 hour
- Cover and cook for 5 hours or until tender
