tip round roast (or roast of your choice)
Montana Outlaw BBQ Beef Rub
Kosmos Q SPG

dark beer

Instructions
Season roast with Montana Outlaw BBQ Beef Rub and Kosmos Q SPG, set aside to rest at least 2 hours or up to 8
Chop all vegetables and set aside
In a oven-proof pot, heat olive oil over medium high heat and brown all sides of roast
Remove from heat. Light your smoker and warm to 250°
Deglaze the pan with the beef broth and add beer and vegetables
Place in smoker without lid for 1 hour
Cover and cook for 5 hours or until tender
